During my time at Iowa State, I worked on a capstone product development project to create, scale-up, and commercialize a unique consumer packaged food product. My team determined a gold standard for our product through conducting consumer and instrumental testing. In addition, as the Co-Processing Leader during the process development stage of the project, I applied my food processing knowledge and problem solving skills to adapt our formula to industrial plant conditions, as well as modify our processing steps to make them more efficient and create a more consistent product. Though my experience as a research assistant to Dr. Terri Boylston at Iowa State University, I had the opportunity to utilize my chemistry background by running starch analysis on cookies made with resistant starches to determine how much of the starch retained its indigestibility, and therefore health benefits, after baking. In this position, I was also expected to be self-motivated and organized in thoroughly recording all data and testing.
